February 8, 2021I decided to purchase the 20 Qt Vigor double boiler from Webstaurantstore.com for the thick base, the thick sidewalls and the great price. When I need to maintain a temp for X period of time, then I remove the top pot from the heated water pot and I set it aside with the lid covering the pot and it does a very good job of maintaining temp. I'll be purchasing the 12 Qt Vigor double boiler for smaller cheese batches very soon.
